Galchi Factory 갈치공장

Galchi Factory is a seafood restaurant at 1296 Haemajihaean-ro in Gujwa-eup, Jeju City, cooking Jeju silver hairtail and abalone. Whole grilled hairtail is seasoned only with salt and cooked with its long silver skin intact. It arrives on an elongated platter sized to preserve the form of the fish. Moist white flesh separates into broad flakes beneath the skin, while the fine belly bones run in an orderly line along the body. Braised hairtail places cross-cut fish sections, thick radish and potato, red chili, and large pieces of green onion in a wide pot of spicy red sauce. Radish and potato absorb the liquid below the fish and turn red through their edges. The hairtail flesh pulls gently away from its central bone. Rather than leading with sugar, the sauce retains the heat of chili powder and the savory liquid released by seafood and vegetables. Grilled abalone cooks the meat in its shell with butter, leaving a tender surface and a more elastic center. Abalone ttukbaegi submerges abalone and other seafood in a hot broth. Abalone stone-pot rice cooks pieces of the shellfish with grain, allowing rice against the heated base to form nurungji. Seasoned namul, salad, barley kimchi, and several banchan occupy individual small vessels. A flatfish accompaniment uses a whole flat fish, crisping its outside while retaining moist flesh under the thin bones. The salted grilled hairtail, red braising sauce, buttery abalone, and fermented acidity of barley kimchi remain distinct across separate dishes. The dining room has large windows facing the sea, broad aisles, and a mixture of four-seat and eight-seat tables. Tabletops and the gaps between them accommodate the unusually long fish platter, braising pot, stone bowl, rice, and numerous banchan without stacking vessels. From the window section, the horizon and coastal water remain visible above the low seaside road.
