Gaeseong Mandu Gung is a third-generation Gaeseong-style dumpling restaurant in a hanok at 11-3 Insadong 10-gil, Jongno-gu, Seoul. A worktable near the inner entrance holds wrappers and filling, connecting the hand-folding process with the dining rooms. Each wrapper is thin enough to reveal the shape of the dense filling, yet its closely pleated edge supports a large dumpling in hot broth. Meat mandu combines minced pork, cabbage, mung-bean sprouts, tofu, and garlic chives in a mild filling. Kimchi mandu adds mature cabbage kimchi, giving the cut interior a red color and a firmer vegetable crunch. Gaeseong meat mandu-guk and kimchi mandu-guk each place six large dumplings in a clear brisket broth. The pale meat filling and the fermented acidity of kimchi remain distinct in the same transparent stock. When a dumpling is split, the minced filling absorbs broth and the folded wrapper softens around its edge. Joraengi-tteok mandu-guk adds small rice cakes pinched at the center, contrasting their dense chew with the rounded dumpling skin. Garaetteok mandu-guk uses thin oval slices of rice cake. Assorted steamed mandu divide meat, kimchi, mushroom, and other fillings on one platter without submerging them. Mandu jeongol places meat and kimchi dumplings with vegetables in a broad metal pot and continues cooking them in broth at the table. The wrappers grow softer as they simmer, while pork juices and kimchi seasoning move into the liquid. Black-pork bossam presents thick slices of boiled pork with kimchi. Nokdu-jeon spreads ground mung bean and pork into a broad pancake, browning the outer rim while keeping a dense center. Dongchimi, young-radish kimchi, cubed radish kimchi, and soy dipping sauce occupy separate side vessels. The clear chilled dongchimi liquid remains apart from the hot dumpling soup. Exposed rafters and wooden posts define the hanok interior. Rooms and a central hall contain square tables sized for individual soup bowls or the wide hot-pot vessel, with the steamed dumpling plate and small kimchi dishes arranged around it.
