The seasoned galbi features a restrained, non-sweet marinade that encourages continued eating, while the raw galbi showcases tender, well-marbled beef at its best. The restaurant's true distinction, however, lies in its banchan. A spread of over a dozen side dishes, including marinated soy crab, japchae, hobak-jeon, fried eggplant salad, shrimp-broccoli salad, and flatfish, arrives at a level of care rivaling full hanjeongsik, all refillable. The doenjang jjigae made with galbi bones delivers remarkable depth, and the bibim naengmyeon serves as a solid finishing course. Despite the massive scale, table turnover is efficient, though weekend visits without a reservation may still involve a wait.
