Duruteo 두루터

Duruteo is a Korean restaurant at 286 Byeongmokan-ro in Anyang, specializing in handmade dumplings and hot pot. Its mandu jeongol uses a pale broth made from Korean beef bones. Meat dumplings, kimchi dumplings, cabbage, mushrooms, and rice cakes cook together in the pot. The meat dumpling contains minced pork and vegetables in a mild filling, while chopped fermented kimchi gives the second type a sharper vegetable flavor. Both are folded at the restaurant. A separate plate of steamed dumplings accompanies the hot pot, placing the two fillings on the table before their counterparts in the broth have softened. The steamed wrappers retain a firmer surface, while the dumplings inside the pot absorb the beef-bone stock. After the dumplings and vegetables are eaten, house-made kalguksu noodles go into the remaining broth. Starch released from the cut noodles thickens the stock as it cooks. Perilla-seed kalguksu is also listed as an independent noodle dish, with ground perilla turning the soup opaque and nutty. Pork duruchigi adds a seasoned stir-braised meat dish to a menu otherwise centered on dumplings and noodles. The building contains dining space on two floors, including conventional chair tables and a floor-seating section. Napa cabbage kimchi and pickled radish are set beside the pot, providing fermented and crisp vegetables between spoonfuls of the bone broth.
