Molmang-guksu turns momguk, Jeju's pork soup with gulfweed, into a noodle dish: shreds of the seaweed thicken the pork broth and make it darker than the gogi-guksu. The black pork gogi-guksu, for comparison, sets thin slices of meat in a milky pork-bone stock. The one-person set adds thick-cut dombe-gogi and dumplings to the noodles. Big windows look out on a Jeju stone wall, and warm nurungji and solomon's seal tea follows the meal.
