The Ranch Brewing Euljiro 3-ga is a pub at 11 Eulji-ro 12-gil in Jung-gu, Seoul, pairing beer from a Daejeon brewery with Detroit-style pizza. The beer is brewed in Daejeon and connected to the Seoul tap wall in several styles, including hop-forward IPA and crisp lager. The pizza is baked in a high-sided rectangular pan instead of as a thin round pie. A thick, focaccia-like dough is fermented to form an open crumb. Cheese is spread all the way to the edges before the pan enters the oven. Where the cheese meets the hot metal, it darkens into a crisp border, while the center keeps its softer bread texture. Tomato sauce, cheese, and toppings form layers above the raised dough in each square piece. Because the pie is cut into rectangles and served in the shape of its pan, corner pieces carry caramelized cheese across two sides. Carbonara is a separate pasta dish, coating noodles with an egg-and-cheese-based cream layer and black pepper. Fries and fried bar snacks appear in smaller dishes that fit beside the beer glasses. The interior retains the rough frame of an older Euljiro building and combines exposed wall surfaces with metal and wood. A long bar holds the taps and glassware on one side. Tables on the other side are broad enough for a rectangular pizza tray and several beer glasses. Brewery lettering and beer-style graphics cover parts of the wall, while low lighting and music equipment complete the main room.
