Chungnam Sikdang is an old soup-rice shop in a narrow passage inside Gohyeon General Market in Geoje. Its seokkeo gukbap combines glutinous-rice sundae, boiled pork offal, and head meat. Sundae gukbap contains the sausage alone, while naejang gukbap centers only the internal cuts. The sundae is sliced thinly, leaving a soft glass-noodle filling inside the casing. The offal is boiled until its wider pieces become tender and retain little of the strong aroma that often accompanies organ meat. Their textures remain easy to distinguish when both are ordered in the mixed bowl. The pork-bone broth is milky like seolleongtang but carries little visible grease on the surface. Diners can taste the unseasoned broth first, then dissolve red dadaegi for chili and garlic or add salted shrimp for salinity and fermented depth. Finely cut perilla leaves release their green fragrance over the surface and change the finish of the pork fat. The side plate contains cubed radish kimchi, raw onion, garlic, a small green chili, ssamjang, salted shrimp, and dadaegi rather than cabbage kimchi. The radish provides a dense fermented crunch, and the raw onion and garlic can be touched to soybean dipping paste. The compact market interior places an open central kitchen among closely arranged tables, leaving the soup pots, toryeom work, and dining seats within the same small room. In the mixed bowl, rice, sausage, offal, head meat, and perilla can be lifted together. Removing the solid pieces first and touching them to salted shrimp leaves the broth less seasoned, while stirring everything from the beginning distributes the sausage filling and chili through the toryeom rice.
