Tsukeru is a tsukemen specialist tucked into an alley across from Hongik University's main gate, near Hongdae Station. The shop takes a distinctly different approach from the thick, creamy dipping broths found at most tsukemen restaurants. The tsukejiru is light and clear, built on a katsuobushi base with a notable vinegar acidity that gives it a surprisingly refreshing, characterful identity. Those expecting a rich pork-bone-heavy experience may be caught off guard initially, but the shop has earned recognition for carving out its own lighter, tangier style. The house-made noodles are chewy and springy, holding up well against the broth. Portions come in 200g or 300g at the same price, so opting for the larger size costs nothing extra. The kara-tsukemen (spicy version) is not particularly hot, and the shoyu ramen offers a clear, clam-based seafood broth with an understated addictiveness. Yaki-gyoza comes in the ice-wing (binghua) style, and rice bowl sets with nori-jorim or mentaiko are available as sides. The restaurant is on the ground floor and easy to find.
