Cheongdam Chueojeong Neunggok 청담추어정 능곡점

Simmered in a sanghwang mushroom broth, the chueotang (ground loach soup) is mild and clean, and needs a pinch of sancho pepper to bring out its aroma. Rice comes yellow with turmeric, flecked with a little cordyceps. The Mubyeong set adds fried loach, soy-marinated crab and sole to the soup, and the crab is mild enough on salt that the rice tends to go first. The Jangsaeng set also brings dried yellow croaker steamed in a lotus leaf, one fish for every two people.
