Changpyeong Gukbap 창평국밥

Under a yellow sign in Changpyeong, the modum-gukbap packs head meat, intestines, amppong (pork uterus) and sundae into one heavy bowl. The broth is rich without gaminess, and the solids get dipped in a sauce of perilla powder and chojang (vinegared chili paste). Dadaegi chili paste comes in a generous mound, and adding all of it at once makes the soup too salty.
