Before the noodles arrive, grab a cup of hot broth from the self-serve bar. The shop says it is aged for a year, and it tastes rich without being harsh, with a slight peppery bite. The mul milmyeon (wheat noodles in cold broth) has chili seasoning stirred into the soup, making it spicy as well as cool, unlike most cold noodles, and the noodles are springy. Bibim milmyeon comes in a coarse, spicy paste with moderate sweetness; even committed broth fans may want to try this one. Ask for cold broth and pour it in for a half-soup version. A large serving is close to double. A queue forms soon after opening, but tables turn over quickly and food arrives about three minutes after ordering.
