Busan Galmaegi 부산갈매기

Opened in 1978 and now run by the founder's son, this grill holds a spot on the galmaegi-sal alley in Dohwa-dong, Mapo. Galmaegi-sal, the pork skirt cut, is sliced thin and flat here and marinated like pork galbi, yet keeps its chew. Scallion salad, sour kimchi, and garlic are laid in the rim of the grill first. Poured over them, the unsalted egg then sets into a steamed egg that soaks up the meat fat.
