Big chunks of seonji, congealed ox blood, line the bottom of the bowl, layered with tripe, namul and bean sprouts. The seonji haejangguk broth has a noticeable black-pepper note and a mild heat that never turns harsh. Naejangtang (offal soup) comes in a clear broth, and the beef gukbap is also generous with meat.
