Inside a hanok in the Seochon alleys, this bar builds cocktails on Korean traditional liquors and regional ingredients, and organizes its menu like a discography: numbered albums, with signatures from earlier series still available. Songpyeon layers sweetness and aromas that recall the rice cakes eaten at Chuseok, and Oolong-tan reworks a Manhattan around oolong tea. Bartenders walk through the base spirit, the supporting ingredients and the region behind each glass, and the whole team speaks fluent English. The room runs loud and lively rather than hushed, and the food list is short. When seats fill, names go on a waiting list outside the hanok, though arriving right at opening often means walking straight in.
