Honey replaces sugar and eggs replace emulsifiers in the small-batch gelato, made on a Seochon lane that climbs toward Suseongdong Valley. The case runs from strawberry and yuzu to black sesame, basil, red chili, saffron and charcoal. A gelato omakase lets three people share small scoops of 21 flavors, with a drink each.
