Yeongok Kkukjeogu Tang 연곡꾹저구탕

Kkukjeogu, a small freshwater fish from the Yeongok stream area, is ground fine and simmered with gochujang into a stew that tastes somewhere between chueotang loach soup and fish porridge. The gamjabap served with it, rice cooked with big chunks of potato, is tipped into the remaining soup once the solids are gone. Adding sujebi, hand-torn dough, gives chewy pieces soaked in broth.
