Useong Sundae 우성순대

The sundae in the soup is the glass-noodle kind found at any snack stall, but it is springy, and with plenty of meat in the bowl the broth runs dense. Gopchang-bokkeum, stir-fried intestines, comes in a garlicky chili sauce, and a complimentary bowl of broth on the side cools things down.
