A thin cabbage-and-buckwheat pancake lands on the table before the main pot, free with the order. Yangpun deunggalbi-jjim, pork back ribs braised in a sweet, fiery sauce, runs about as hot as Shin Ramyun, and a mild soy-sauce version suits children. A separate bowl of gondre-bap, rice with Korean thistle greens, takes a few spoonfuls of the leftover sauce, and the bitter greens meet the sweetness.
