Umyeondong Soba 우면동소바

Buckwheat noodles are made in-house at this small spot in a residential lane of Umyeon-dong, and lunchtime brings a line. Pan soba comes chilled on a tray with a separate dipping broth, and dipping one bite at a time keeps the broth from thinning and the buckwheat aroma intact. Naeng soba sits in a sweet, cold broth. Pork cutlet (donkatsu) arrives with rice and salad, and the cheese version stretches with melted cheese inside a crisp coating. The loin cutlet can be ordered for delivery as well. With the warm on soba, the broth tastes slightly different once you eat it together with the seasoned noodles.
