Taifeng 타이펑

Taifeng is a neighborhood Chinese restaurant at 61 Gwanak-ro 24-gil in Gwanak-gu, Seoul, serving handmade dumplings and dim sum alongside noodles, rice, and shared dishes. Wrapper thickness and the ratio of filling define the dumplings. Steamed preparations keep the wrapper soft and moist around the filling, while pan-fried or fried forms add a firmer exterior. Ordering several types separates cooking methods or gives a table small portions of different fillings. Beef jjamppong is the principal noodle dish, using beef to build a weightier broth and placing noodles and meat in the same bowl. Because the spicy liquid drives the meal, dumplings or tangsuyuk provide a useful non-soup counterpart. Glutinous-rice tangsuyuk has a crisp outer coating and a chewy layer beneath it. Sections touched by sauce soften differently from dry sections. Dipping part of each piece instead of covering the entire plate preserves both textures through the meal. Jjajangmyeon leaves a mild chili edge behind the black-bean sauce, distinct from the broth-based heat of beef jjamppong. Yuringi combines fried chicken with a tangy, aromatic sauce. Yangjangpi brings vegetables and other ingredients into a cold mixed dish with an assertively tart dressing. Applying that dressing in small amounts keeps the crunch and individual shapes of the ingredients visible before the acidity joins them. Mapo tofu rice gathers soft tofu, minced-meat seasoning, and rice in one bowl, offering a rice-based meal instead of noodles. One diner can choose beef jjamppong, jjajangmyeon, or mapo tofu rice and add dumplings for a second texture. A group can place glutinous-rice tangsuyuk or yuringi beside yangjangpi, dividing fried food, cold mixed vegetables, dumplings, and noodles. Rather than stacking several strongly spicy dishes, placing dim sum or jjajangmyeon between beef jjamppong and mapo tofu makes the kitchen's range of steaming, frying, mixing, and simmering easier to distinguish.
