The C-flat uses less milk than a flat white and adds crystals of raw cane sugar. Lattes can be made with a choice of beans, and with Adey Abeba they take on a soft fruitiness and acidity. Filter coffee tastes true to the notes written for each bean, and there is a cinnamon-scented snickerdoodle cookie. The converted house holds only about 15 seats indoors and out; when those are full, people take their coffee to go.
