From the 81st floor of Lotte World Tower, inside Signiel, Seoul spreads out below the windows, and a sunset booking turns the red sky straight into the night view. Courses such as Stay Emotion and Stay Fun open with a cold plate of fire-grilled leek and egg mimosa, then move through a soft egg with truffle sauce and ravioli. The main is duck, lamb, beef or lobster, and the beef tenderloin steak comes at a surcharge. Some courses include blue cheese and foie gras, which not every diner enjoys. After the meal, guests move to the Pastry Library to help themselves to macarons, chocolates and financiers.
