Onion and garlic are grilled, minced and stirred into the bowl, adding a toasty, slightly smoky edge to the dense chicken broth. Tori paitan has a peppery bite, kara paitan makes the same base spicy, tori shoyu turns it toward clean soy sauce, and tori shio rounds out the four. The shop keeps separate aging fridges for broth and for eggs, and the onsen egg is seasoned right through the yolk. Pork belly chashu is an extra and arrives as round slices. Noodles, rice and kimchi are free to add. Big eaters do better asking for extra noodles up front, since the broth cools by the time a later refill arrives. Payment happens at the vending machine by the entrance.
