Each diner gets a big empty bowl to fill with rice, bean sprouts, vegetables and seaweed flakes, then top with the smoky stir-fried webfoot octopus (jjukkumi) or long-arm octopus (nakji) and mix by hand. The sauce is sweet and on the salty side, so a full bowl of rice per person brings it into line. Mild is red but barely hot; medium leaves a little heat at the end. The shrimp tempura is large shrimp in a thin coat.
