Meat trimmed from around the pork ribs, sold as kkupsal, has a springier grain than belly and holds on to both juice and fat; supply is limited to 2 portions per table, so it often sells out. Thick pork neck stays moist, and staff grill every cut for you at this Seongsu branch. Perilla leaf pickles layered with thin radish wraps, pickled ginger, jalapeno and wasabi cut through the fat. The seasoned kokumi rice has smooth, separate grains, and a slice of neck laid on top eats almost like sushi. Break the poached egg into the truffle Chapagetti, an instant black-bean noodle dish dressed with truffle powder, for a softer sauce. Corkage is free, and not only for wine: whisky and Japanese sake are welcome too.
