The service follows a simplified system where patrons only specify the number of diners for preparation to begin. Initially, the broth presents a mild profile, but continuous boiling draws out juices from the vegetables and processed meats. A defining characteristic of this Paju-style stew is the generous inclusion of crown daisy and scallions, which contributes a cleaner vegetable quality compared to variants in other regions.
