Thick-cut Jeju ogyeopsal, samgyeopsal and pork neck go on the grill, and a pile of mugeunji, long-aged kimchi, sits at one edge, where the pork fat softens the leaves. The seaweed bibim noodles, tangy and a little spicy, are served cold and get picked at between bites of hot meat and kimchi. The yukhoe, seasoned raw beef, comes without an egg yolk, and the soup on offer is mugeunji kimchi jjigae.
