Jangsudae 장수대

Jangsudae is a hwangtae-haejangguk (dried pollack hangover soup) restaurant on Jimok-ro in Paju, Gyeonggi Province, featured on multiple television programs including Life of a Master Chef. The soup delivers an immediate impression of depth: the dried pollack's umami has fully dissolved into a broth that is simultaneously clear and substantial. Generous portions of hwangtae retain a satisfying chewy texture, and dipping the fish in the accompanying sauce draws out even more flavor. The side dish of stir-fried fish cake balances sweet and salty notes and has become a favorite among regulars. Additional items such as memil-jeonbyeong (buckwheat crepe) and meat jeon are also available. Opening at 8 AM, the restaurant is well positioned for an early morning restorative bowl.
