Idook Seolleongtang 이도옥설렁탕

The seolleongtang is all but unsalted and needs the scallions and sea salt served in containers, whereas the hanwoo ox-head gomtang arrives already seasoned and needs no salt at all. Wang galbitang is made with American beef ribs, strong in meaty aroma and a little chewy. The kkakdugi is salty enough that eating it alongside cuts down on the salt you add to the soup.
