Large hairtail pieces simmer with radish and potato in an earthenware pot for the galchi-jorim (braised hairtail), and the godeungeo-hoe, raw mackerel, has almost no fishy smell. Most ingredients come from Jeju, down to domestic chili powder. Dishes are cooked after ordering, so expect 15 minutes or more.
