The signature hwangcha (yellow tea) is made from 50-percent-fermented leaves, producing a smooth, clean flavor without the astringency of green tea or the intensity of black tea. For around 5,000 won per person, guests receive a thermos of hot water and a traditional tea set, allowing multiple steepings of the same leaves in a leisurely self-guided tea ceremony. Accompaniments include black sesame yanggaeng, yakgwa, and gureum-seolgi (cloud rice cake), all thoughtfully paired with the tea.
