Arriving at 10:05 can already place a guest twelfth in line, and visits during off-peak hours such as a Friday at 3:30 PM or a Sunday afternoon still require one- to three-hour waits. Deferring a queue number sends it to the back of the line, so staying nearby is essential. Staff grill every cut of meat from start to finish at the table, and the freshness and quality of the pork - yielding a tender, supple texture - form the core appeal. The bone-in belly offers rich fattiness, the snowflake pork neck delivers an exceptionally soft grain, and the back neck has a distinctive flavor approaching that of premium collar meat, allowing diners to experience different character from each cut. Pork rind with a galbi-style sauce is another enjoyable addition. King oyster mushrooms roasted in foil release abundant juices, and green onions caramelize to a sweetness that complements the pork. A pinch of Maldon sea salt from England maximizes the meat's natural flavor. Wrapping grilled meat in roasted basil is the restaurant's signature pairing, and the majority of guests add basil to their order.
