The signature jeonbok-dolsot-bibimbap centers on a sauce made from soy and abalone innards: it seems understated on the first bite but proves steadily addictive, drawing you back spoonful after spoonful. The kitchen's philosophy is to minimize aggressive seasoning, letting the natural character of the ingredients emerge. The momguk combines the distinctive seaweed aroma of mojaban with a clean pork-bone broth free of any off-flavors, showcasing what Jeju comfort food is truly about.
