At a worktable near the entrance, round wrappers are filled and pleated into large dumplings. The mandu jeongol simmers meat and kimchi dumplings with vegetables in a clear, slightly spicy broth, with extra raw dumplings and kalguksu noodles brought on a separate plate. The noodles are wide and flat, and once the dumplings are out of the pot they soak up a broth that has taken on the flavor of the vegetables and fillings.
