Eutteumi is a Korean restaurant at 2287 Jungsangandong-ro in Gujwa-eup, Jeju City, built around a whole fried rockfish set and seafood earthenware soup. For the rockfish set, a cleaned fish is fried intact and covered with thin raw onion, green onion, and a brown soy-based sauce. The coating remains light enough for the head, body, fins, and tail to retain their original outlines. Moisture leaves the fins and small bones during frying, giving those outer sections a brittle, cracker-like texture. White flesh remains moist near the thick center bone and separates into broad flakes under chopsticks. The sauce combines soy seasoning, measured sweetness, and aromatic vegetables. It wets the fried surface while leaving the sliced raw onion crisp. A spoonful of white rice can hold both fish and sauce-coated onion, while the heavy spine is left apart on the main plate. The set table includes a soup made with beef and seaweed, several seasoned greens, kimchi, and small banchan in individual bowls. The seaweed soup supplies a warm, soft liquid beside the dry fried fish, and the vegetable dishes retain distinct leaf and stem textures. Abalone seafood ttukbaegi cooks abalone, shrimp, and shellfish in a hot broth inside an earthenware pot. Its bubbling liquid and shell-on ingredients differ clearly from the intact fried rockfish. The broader Korean menu also contains a standard set meal and yukgaejang. Seasonal squid mulhoe and damselfish mulhoe place seafood and vegetables in chilled seasoned liquid rather than hot soup. The room is a compact dining space with pale walls and wooden tables. Each square tabletop is sized to hold the long whole-fish plate, rice bowl, soup, and multiple vegetable dishes without placing the wet banchan over the crisp fins.
