A whole rockfish is fried in a thin coating, keeping its shape from head to tail, with the fins and small bones turned cracker-crisp. Topped with raw onion, scallion and a soy-based sauce, the rockfish set comes with beef seaweed soup, seasoned greens and kimchi. Ingredients run out, sometimes by early afternoon even on weekdays.
