Fresh, never-frozen pork belly and neck are served all-you-can-eat on the second floor of a Myeongdong 4-gil building, along with refills of doenjang stew. Meat sears on the outer ring of each round grill while the stew, with tofu and vegetables, bubbles in a well at the center, and staff keep topping up the broth. As the pork cooks, the stew reduces and darkens, and rice stays on the side or is stirred into the thickened broth a spoonful at a time. Thick belly slices show clear layers of fat and lean, while neck meat has fine fat threaded through it, so the two chew differently. Lettuce, garlic, kimchi and seasoned scallions come from a self-serve bar. Because plates are refilled one at a time, there is no need to crowd the grill at the start.
