Pork dry-aged for seven to twenty-one days is cut thick and grilled over charcoal by staff, who handle every piece. Aged kimchi and a seasoned green-onion salad stand in for lettuce and perilla wraps, and kimchi-jjigae, gochujang stew or fried rice closes the meal. Expect a wait, and seating only once the whole party arrives.
