Doma 도마

Served only at lunch, heukheuk bulgogi mixes Jeju black-pork shoulder with skin-on pork belly and grills it over coal briquettes after you order. The two cuts chew differently under the same marinade, lean shoulder against fatty, skin-on belly, and rice and a doenjang stew with squash and tofu come with it. Beef is sold in small portions by cut, much like a Japanese yakiniku shop, and cooked on the tabletop grill. Yukhoe (seasoned raw beef) and yukhoe bibimbap cover the no-grill side. The compact room of wood and brick packs its tables close together.
