Darae Hambak Steak is an old-style Western diner in Suyu-dong's drivers' restaurant area, making hamburger steak, pork cutlet, and fish cutlet since 2008. The kitchen divides its meat preparation into two methods. Some whole cuts are pounded into pork loin for tonkatsu, while another portion is ground in a house ratio and shaped into thick hamburger patties. Hambak steak arrives on a heated stone plate under brown sauce and a fried egg. Sauce bubbles around the edges where it touches the stone, and the underside of the patty continues to cook as the meal progresses. Breaking the soft yolk thickens the sweet and tangy sauce, which can also be spooned over the rice. Standard donkatsu coats the pounded loin in a relatively thin crumb and covers the fried cutlet with sauce in the traditional Korean diner style. Spicy donkatsu and spicy hambak replace that brown topping with a red sauce carrying both chili and sweetness. Fish cutlet encloses flaky white fish in fried coating, producing a softer layered center than either the loin or the ground-meat patty. Omurice hambak places egg-covered fried rice and hamburger steak together on one plate. Cream soup comes before the main dish. Shredded cabbage salad, cubed radish kimchi, bean sprouts, pickles, macaroni salad, and kidney beans occupy the edges or separate dishes. The small-cut kkakdugi is cold and crisp, adding fermented acidity between portions of fried coating and meat sauce. Hambak remains hot on stone, while donkatsu sits on a flat plate with rice in a separate bowl, so the two sauce-covered dishes retain heat differently. The exterior and room resemble an established neighborhood drivers' diner rather than an ornamental Western restaurant. Closely placed tables and bar-style seats keep the setting functional. Behind the short menu, the hand-shaped patty, pounded loin, flaky fish, bubbling stone plate, and egg-wrapped rice require distinct preparation rather than one meat base with renamed sauces.
