Bakdal Sikdang is a longstanding specialist in makchang sundae in the Yonggung area of Yecheon, Gyeongsangbuk-do. The local specialty differs from typical Korean sundae in that it uses thick pork intestine casing stuffed generously with glutinous rice and vegetables. The casing is remarkably tender rather than chewy, releasing a deep, nutty richness with every bite that pairs beautifully with the filling inside. The sundae-gukbap features a clean, earthy broth enriched with perilla seed powder and free of any off-putting odors. Charcoal-grilled squid (ojingeo tangui) carries an appealing smoky char with a milder-than-expected seasoning that works well as either a rice accompaniment or a drinking snack.
