The tendon bowls split on two things, whether conger eel is included and how many shrimp go on top, giving ari tendon, ebi tendon and anago tendon; the anago version lays a whole large eel across the rice. Soy sauce already sits under the rice, so add no more, and once some of the tempura is gone, break the onsen egg into the bowl and mix. When the frying starts to feel heavy, dip pieces in fresh wasabi. Tendon made the name, but the aged-fish sushi holds its own.
