Usijang Gukbap 우시장국밥

Usijang Gukbap is a sundae-gukbap restaurant in Hwangnyong-myeon, Jangseong County, Jeonnam Province, where the key is a milky-white broth slow-cooked in a cast-iron cauldron. Dried pollack is simmered into the pork bone stock, creating a unique umami depth that distinguishes it from standard dwaeji-gukbap-delicious even without adding dadeogi spice paste. Ordering ttaro-gukbap serves rice and soup separately, while the modeum-gukbap includes sundae, head meat, and offal. The glass-noodle sundae is bouncy, and the offal is tender with zero gaminess. A self-serve bar offers seasoned chives and pickled perilla leaves, and the kimchi is crisp and tangy, perfect for wrapping with rice. Three wood-fired hearths are visible outside the restaurant, and its feature on the TV show Jeonhyunmu Plan has significantly boosted visitor numbers.
