The menu is hanu sirloin (deungsim) and nothing else, and long-serving staff stay with each table to grill the beef through to the end. The scallion salad that comes with it is sharply hot. Cold, spicy yeolmu guksu, noodles in young-radish kimchi broth, goes between bites of beef, and once the meat is gone the meal moves on to kkakdugi fried rice or doenjang porridge.
