A Japanese owner and an all-Japanese staff run this sanuki udon shop by Hanyang University, with dense, tightly chewy noodles. The house Gajoku udon sets shrimp tempura over a broth with a clear katsuobushi edge, while bukkake udon, with just a splash of sauce, shows off the noodle itself.
