Sintoburi Baek Sundae 신토불이 백순대

Baek sundae gukbap keeps the red seasoning out, setting blood sausage and offal in a clear pork broth, so the first spoonful is mild. Work the dadaegi chili paste in from one side of the bowl, a little at a time, and you can alternate between the plain and the spicy broth in the same bowl. The ginseng version adds a gentle ginseng aroma to the same bowl, and a boneless pork gukbap leaves the offal out entirely.
