Pork bones and meat are simmered long into a Masan-style broth, cloudy and heavier than the Busan kind. Chives, saeujeot (salted shrimp) and a red chili paste are added at the table; the paste turns the whole bowl red fast, so taste a spoonful plain first, then work it in a little at a time from the edge.
