Only buckwheat noodles and seaweed flakes are in the bowl when it arrives; you pour in the slushy dongchimi broth, bibim sauce and perilla oil yourself. The broth is sweet rather than tangy, so try the noodles in plain broth first and then decide whether to add the sauce. The makguksu is large enough that one bowl is a struggle for one person, and the buckwheat pancake is nutty and savory. A wide terrace is set aside for guests with dogs, separate from the indoor seating.
