Two floors below street level near Seoul Station, this dining room turns seasonal Korean ingredients into a French-style tasting course. Small amuse-bouches and starters come first, followed by a main and dessert; staff explain each plate, and a tablet at the table holds the details. Pork cheek with quinoa pairs tender meat with the pop of quinoa grains. The main can be switched to a chaekkeut (striploin) steak, and uni and wine pairing are optional add-ons. Bar seating sits alongside regular tables. Reservations go through Catch Table, and arriving early means waiting until your slot.
