The soy crab carries a traditional, savory soy flavor without any fishy aftertaste, and the yangnyeom gejang (spiced crab) is prepared by adding seasoning atop the soy-marinated crab rather than using frozen crab, which preserves a sense of freshness. Mixed with the accompanying egg-and-roe rice, it makes for an irresistible combination. The complimentary sundubu-jjigae (soft tofu stew) is executed at a level comparable to dedicated stew restaurants, serving as an ideal palate cleanser between bites of raw crab. The samgyetang (ginseng chicken soup) features a clear, mild broth with thoroughly tender chicken, and the haemul pajeon (seafood pancake) comes loaded with seafood and scallions, well-suited for sharing. Because few gejang restaurants stay open late into the evening, this spot draws a particularly large international crowd, and weekend visits without a reservation can result in queues extending down the stairwell.
